Our Story

Nick, by his own admission is rather picky when it comes to ingredients. He has after all, a reputation to keep up as a celebrated chef with a wealth of experience within the industry. This dedication sees him leaving home at 1am to ensure he gets the pick of the crop from Billingsgate, Smithfield and Covent Garden London Markets. Now that is dedication.

Nick started his career under the watchful eye of his father, Othmar, who used to own the acclaimed 15th Century Restaurant in Billingshurst and then the Cisswood house Hotel in Lower Beeding. After a three year apprenticeship at the Oakley Court Hotel in Windsor he gained further experience in the Britannia InterContinental Hotel, Hyde Park Intercontinental and lastly the highly acclaimed Hyatt Carlton Tower Hotel.

Prior to starting with the Britannia InterContinental Hotel Nick met Becky and in addition to a blossoming relationship the seeds of running their own business began to germinate. In 1993 the bought The Gables Restaurant in Sussex and began to formulate their unique blend of great food and hospitality. Four years later they moved to the Bolney Stage and then onto The Crabtree in Lower Beeding before finally arriving at The Green Man.

All that hard work has now paid off in the form of consistently high ratings on Trip Advisor as well as awards including “Hall and Woodhouse Best Front of House Team” and “Hall and Woodhouse Best Dining Experience”” for 3 years running!

What’s the secret?

“We simply love what we do” says Becky, “seeing happy customers and getting great feedback still remains a great buzz for Nick and I. We know that we’re only as good as our last meal, so we work hard to be consistent both in terms of the food we serve and the hospitality we offer”.

And the future?

We don’t like to sit still” explains Nick, “we’re always looking at fresh ways to keep our customers coming back. We’ve got great plans for continuing our takeaway service, we are also looking into delivered Seafood dishes and finish at home boxes & some great events over the next year.

 But ultimately, it’s to run a caravan site in the Dordogne! Well according to Becky anyway!
